How it works
The USDA’s refrigerator-thawing guideline allows roughly 24 hours of thawing per 4-5 pounds of turkey; this calculator uses the more conservative 4-pound-per-day rate so the estimate errs toward thawing earlier rather than risking an under-thawed bird. A 12-pound turkey needs about 3 days.

Can a turkey thaw safely on the counter?
No — the USDA advises against thawing turkey (or any meat) at room temperature, since the outer layers can sit in the food-safety “danger zone” long enough for bacteria to grow while the center is still frozen.
Is a thawed turkey safe to refreeze?
A turkey thawed in the refrigerator can be safely refrozen, though quality may suffer somewhat; a turkey thawed by faster methods like cold water or microwave should be cooked before refreezing.
What if I run out of time to thaw it?
The cold-water method thaws a turkey much faster than the refrigerator (roughly 30 minutes per pound) if time is short, or the turkey can be cooked from frozen with a significantly extended cooking time.
